Masala Grilled Pork Chops

If you haven't noticed, we like spicy food at our house. I especially like the combination of Indian & Asian flavors. This conjured the idea of marinading pork in these flavors, then grilling it. I really loved the flavors in this, but next time I might use a thinner cut of pork. These were really thick and while pork lovers might like the end result, I tend to like super juicy pork chops and the thicker cut did not provide that. I also thought about throwing them in a crock pot on low all day with the same marinade and then pulling the meat apart to make Masala pulled pork! Wouldn't that be awesome served on nan! An Indian pulled pork sandwich...who would have thought! As for this meal, I ended up serving this with grilled corn (in the husks), & grilled butternut squash. It takes some time to prepare/marinade, but cooking and clean-up was easy as pie! I hope you enjoy it as much as we did!


Ingredients:
  • 1/4 cup soy sauce
  • 1/4 cup lime juice (about 2 large limes)
  • 1 tbsp garlic (finely minced)
  • 1 tbsp ginger (finely minced)
  • 1 tbsp garam masala (you can find this at a local Indian supermarket)
  • 1/2 tsp onion powder
  • 1 tsp honey
  • 1 pinch of cayenne pepper
Directions:
1. Combine spices & herbs in a bowl (or the marinade bag.)



2. Pour soy sauce, lime juice & honey over the top and mix.



3. Add to marinade bag and coat pork chops.



4. Let marinade in the fridge for at least 2-3 hours.
TIP: If you wanted to make this for another occasion, or double
your recipe for another time, at this point you can freeze in the marinade, defrost & grill!

5. Preheat outdoor grill for direct heat and lightly oil the grate so the pork won't stick.

6. Place pork chops on the grill and cook for about 10 minutes on each side (turning only once.)




7.  Place on serving dish & cover for at least 5 minutes to let it rest before serving.
