Stuffed Strawberries

I saw a picture once of this and just had to recreate it, with a twist of course! It's fun to take to parties, or surprise guests with this fancy, but simple dessert or snack. I hope you enjoy my version of a berries and cream dessert you won't be able to pass up!


Ingredients:
  • 20 whole strawberries (about 16 ounces, hulled)
  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 small pinch of cinnamon
  • blueberries to top (1 or 2 per strawberry depending upon size)

Directions:
1. Cut a thin slice on the bottom of each strawberry so they can stand upright.



2. Cris cross cut berries into wedges (almost to, but not through)



3. Fan wedges slightly.



 TIP: If you place all of the fanned strawberries in the container you plan to store them 
BEFORE you fill with cream, you won't have to move them around and mess 
them up before they have time to set in the fridge.



4. Beat sugar, cinnamon, cream cheese & vanilla until combined, but still stiff.



5. Use a pastry bag (or a quart size baggie w/one edge cut off) & fill strawberries w/filling.
  



6. Top with blueberries & refrigerate until ready to serve (up to 24 hours.)


In the original picture I saw, they were topped with nuts, so if you're not a blueberry fan, feel free to change to something you like. These are great to serve as an appetizer, a snack or dessert!
